Mixed Vegetable kurma

Vegetable kurma.

Ingredients:

  • Carrots – 3; cut into medium circles
  • Green beans – 6-7; cut into medium pieces
  • Potato – 1 big, cut into medium size cubes
  • Bell peppers – 1; cut into medium pieces
  • Onion – 1/2 – cut into small pieces
  • Green chillies – 2
  • Ginger garlic – 1tsp
  • Tamarind juice – 2 gooseberry size, soak & take juice of it.
  • Peanuts-1/4cup+Cashews – 10+Raw coconut- 3tsps, put all these 3 in mixie add water and make paste

Procedure:

Take wide pan, on the stove & add 5tsp or oil. Once oil is heated, add mustard seeds, cumin,onions,green chillies saute for 3mins. Next add ginger garlic paste, mix well & saute for 2 mins. Then add all the vegetables mix well & let them cook for 3 to 4mins. Add 1cup of water,tamarind juice, salt,turmeric, red chilli powder mix well & cook for another 5mins. Then add peanuts paste, add some more water, dhania powder mix well & cook until the vegetables are cooked, lastly check the taste & adjust if anything needs to be added & garnish with cilantro. You can enjoy with any fried rice or chapati’s..enjoy!!!

 

 

 

Gutthi vonkaya (simple version)

You don’t wanna standup in kitchen for long time? But still you wanna make  yummy  bagara bhaigan? Then yes you are at the right place. So why wait, lets get started:

Ingredients:

Set 1:

  • Peanuts – 1/2 cup
  • Sesame seeds – 1/4cup
  • Dry coconut powder – 1/4cup

Set 2:

  • Eggplants – 10 small size
  • Onion – 1/2 – cut into small pieces
  • Green chillies – 4 or according to your taste
  • Tomatos – 2 small size
  • Ginger garlic – 2 tsp
  • Tamarind juice –  2 gooseberry size tamarind – soak & take juice
  • Red chillie powder – 2tst (or adjust according to your taste)
  • Turmeric powder – 1/4 tsp
  • Salt according to your taste
  • Dhania powder – 2tsp

Procedure:

  • Dry roast Set 1 and make paste after it gets cold
  • Slit the egg plants, put them in microwave safe bowl, cover  & cook on high for 5mins, check if they are cooked, if not add 3mins more & cook & keep them aside
  • Take wide pan, add 5tsp of oil. Add mustard, cumin seeds, hing, onions, greenchillies and saute. After onions turn brown, add ginger garlic paste & saute.
  • Then add the peanut paste, add salt, chilli powder, turmeric powder, dhania powder,tamarind juice, mix well & let it boil for sometime, add one or 2 tomotos & let it cook
  • Once oil starts oozing out add the egg plants, mix well, check the taste & adjust anything if needed & turn the flame to low, let it cook for 10mins, garnish with cilantro! That’s it!! Eat with any kind rice or roti!! Enjoy!!
