Bell pepper&Tomato pacchadi, traditional way!

Coyote,tomato&green onion chutney!!

Experimented chutney with  Coyote,tomato&green onion & guess what it came out yummy!!

Coyote-1,tomato-1,green onions-3(cut all these 3 into medium pieces);green chilies -10,tamarind(1gooseberry size),garlic(optional)-2pods;cilantro -3tsps

Take medium size pan, add all ingredients from pic.1 > then add: salt, jeera/cumin seeds-1tsp,turmeric powder-1/4tsp,oil-1tsp, mix well & cook on medium flame for 8mins

once the mixture reaches room temperature, add 2tsps of sesame seeds powder

mix well & coarse grind the mixture , check the taste & adjust

Spinach roti pacchadi(chutney)!!

Yummy yummy Spinach roti pacchadi(chutney)!! Please see comments on each slide for the recipe!

Green apple-1(optional- cut into small pieces),cilantro – 3tsps,green chillies-10,garlic-2 pods,tamarind-small goose berry size;cumin seeds/jeera – 1tsp

Take medium size pan, add 2tsps of oil, once heated, add green chillies,jeera, garlic,cilantro& saute for 2mins

Next add, apple(optional),tamarind,spinach,turmeric powder(1/4tsp),salt; mix well & cook for 5mins on medium flame.

once the ingredients are cooked

add 2tsps of dry roasted sesame seed powder & mix well & coarse grind the mixture

next transfer the mixture to serving bowl(check the taste & adjust if anything is needed), then add 2-3tsps of thinly cut onion pieces

put tadka (please see tadka ingredients in my previous chutneys)

mix well ..that’s it!! It can be served as bread spreads, rice, chapti roles etc!!

Tomatillo pacchadi(chutney)

First time I used Tomatillo in my kitchen!I made simple  pacchadi(chutney) & it came out pretty good.

Ingredients – Set 1

  1. Tomatillo’s- 10(cut into medium size cubes)
  2. Cilantro – 1/2bunch (wash & chop roughly)
  3. Garlic – 2 pods
  4. Green chilies – 6
  5. Red chilli powder – 1tsp
  6. Dhania powder – 1tsp
  7. Dry roasted sesame seeds powder – 2tsps
  8. Salt – according to your taste
  9. Turmeric powder – 1/4tsp
  10. Oil – 1tsp

Set 2Tadka ingredients:

  • Oil – 2tsp
  • Mustard seeds – 1tsp
  • Jeera – 1tsp
  • Hing – 6splashes
  • Red chilies – 3
  • Curry leaves – 10

Procedure:

  1. Take medium size pan, add all set 1 ingredients mix well & cook on medium flame for 5mins.
  2. Once the mixture reaches room temperature add sesame seeds powder mix well &  transfer the mixture to the blender & pulse the mixture for 3 times, check the taste & adjust if anything is needed& transfer the mixture into the bowl.
  3. Next put  small pan  on medium flame, then add all set 2 one by one fry for 2 to 3mins & pour tadka into step 2, mix well !! See how simple is that!!
  4. It can be served with white rice, rotis,idlis,dosa’s & it can be served as spread on breads 🙂

Green beans pacchadi with Green apple!

Pacchadi/chutney with Green beans & Green apple??It sounds weird right?But trust me tastes  yummy!! Recipe is pretty simple!

Ingredients – Set 1

  1. Oil – 2tsps
  2. Jeera – 1tsp
  3. Cilantro – 3tsps
  4. Garlic – 2 pods
  5. Green chilies – 6
  6. Green beans –  3 cups(small size)-cut into small pieces
  7. Green apple -1(small size) cut into medium size cubes (note: green apple is optional)
  8. Tamarind juice – 1/4 cup
  9. Dhania powder – 1tsp
  10. Salt – according to your taste

Set 2Tadka ingredients:

  • Oil – 2tsp
  • Mustard seeds – 1tsp
  • Jeera – 1tsp
  • Hing – 6splashes
  • Red chilies – 3
  • Curry leaves – 10
  • Lemon juice – 1tsp (optional)

Procedure:

  1. Take medium size pan, add oil. Once oil is heated, add (1 to 4) from step 1, saute for 2mins. Then add rest of the ingredients from step1 & cook on medium flame for 6 to 8 minutes
  2. Once the mixture reaches room temperature transfer the mixture to the blender & pulse the mixture for 5times, check the taste & adjust if anything is needed. Then transfer the mixture into bowl.
  3. Put  small pan for tadka  on medium flame, then add all set 2 one by one fry for 2 to 3mins & pour tadka into step 2, mix well & add lime juice if required!! See how simple is that!!
  4. It can be served with white rice, rotis & it can be served as spread on breads 🙂

Chutney/Roti pacchadi with: Bell pepper, Celery & Cranberries!

Set1 I ingredients:

  • Bell peppers – 2medium size(cut them into small pieces)
  • Celery sticks – 3 (cut into small pieces)
  • Cranberries – 1 small cup
  • Green chilies – 6
  • Cilantro – 5tsps
  • Turmeric powder – 1/4tsp
  • Salt
  • Oil – 1tsp
  • Dry roasted sesame seeds powder – 1tsp

Set 2Tadka ingredients:

  • Oil – 2tsp
  • Mustard seeds – 1tsp
  • Jeera – 1tsp
  • Hing – 6splashes
  • Red chillies – 3
  • Curry leaves – 10
  • Lemon juice – 1tsp (optional)

Procedure:

  1. Take medium size pan & add all set 1 ingredients EXCEPT sesame seeds powder, mix well & cook on medium flame for 8mins.
  2. Once the mixture reaches room temperature  add sesame seed powder mix will & transfer the mixture to the blender & pulse it for  5times, check the taste & adjust if anything is needed. Then transfer the mixture into bowl.
  3. Put  small pan for tadka  on medium flame, then add all set 2 one by one fry for 2 to 3mins & pour tadka into step 2, mix well & add lime juice if required!! See how simple is that!!
  4. It can be served with white rice, rotis & it can be served as spread on breads 🙂

Fish Pulusu with Cranberries!

First time I tried fish pulusu with cranberries & guess what it turned out so yummy!!! Recipe is  pretty simple. Let’s start!

Ingredients:

  • Oil:  3 -4tsps
  • Mustard seeds – 1/4tsp
  • Jeera – 1/4tsp
  • Methi seeds – 8
  • Hing – 6splashes
  • Curry leaves – 10-15
  • Onion – 1/2 (cut into long slices)
  • Green chilies – 5(slit them)
  • Ginger garlic paste – 1tsp
  • Tomatoes – 1(cut into small pieces
  • Bell peppers(optional) – 1 (small size, cut into small pieces)
  • Cranberries paste – 4tsps
  • Dhania powder – 1tsp
  • Jeera & Methi powder – 1tsp
  • Turmeric powder – 1/4tsp
  • Red chili powder – 2tsps
  • Water – 2 cups
  • Salt – according to your taste
  • Jaggery powder – 2tsps
  • Tilapia fillets – 4(cut each fillet into 4 pieces)

Procedure:

  1. Put wide pan on medium flame. Add oil, once the oil is heated, add the items listed in ingredients one by one & saute in between.
  2. Once tomatoes and bell peppers are cooked add  the ingredients from: cranberry paste until red chili powder, saute for few mins.
  3. Then add water &  salt. Let water comes to boil & evaporate little bit.
  4. Next check the taste & adjust if anything is needed. Then gently add tilapia fillets into step 3, add garam masala (1/tsp), jaggery powder,  mix it.
  5. Let fish cook on sim for 8mins, then garnish with cilantro.

You can serve with hot hot white rice or rotis!!

Note: Wash & cook cranberries without water, once the mixture reaches room temperature, pulse the mixture & store in refrigerator.

Oats+Pulusu!

Simple recipe with Oats & Tamarind juice!

Set1 Ingredients:

  • Oil – 3tsps
  • Mustard seeds – 1tsp
  • Jeera – 1tsp
  • Onion – 1/4
  • Green chilies – 3
  • Okra – 1cup (I used frozen)
  • Drumsticks – 6 pieces
  • Kale – 1 small cup ( chop, soak in hot water for 2mins & drain the water)
  • Tomato – 1(cut into small pieces)
  • Curry leaves – 10
  • Hing – 6splashes
  • Turmeric – 1/4tsp
  • Red chilli powder – 1tsp
  • Dhania powder – 1tsp

Set 2 Ingredients:

  • Tamarind juice – 2 cups(you can adjust according to your taste)
  • Water – 3 cups
  • Steel cut oats (available in Costco) – 2 cups
  • Salt (according to your taste)

Procedure:

  1. Place pressure cooker on medium flame, add 3tsps of oil. Once oil is heated add set1 ingredients one by one, saute for 5mins.
  2. Next add tamarind juice, water & salt. Once water reaches boiling point add oats mix well  check the taste & adjust if anything is needed. Pressure cook for 4 vessels. Once the pressure is off, add cilantro & mix well and serve hot(ghee always adds up more taste 😉 )

See how simple is that!! So why wait!! Please try!!!

Cranberry & Kale Chutney!!

Chutney with Cranberries!!

Ingredients:Set1:

  • Fresh Cranberries (available in Costco)-2 medium size cups
  • Green chilies – 6-10
  • Garlic cloves – 2
  • Cilantro – 3tsps
  • Kale – 1medium size cup (chop and put it hot water for 2 mins &drain the water)
  • Dhania powder – 1tsp
  • Turmeric powder – 1/2tsp
  • Oil – 1tsp
  • Jaggery powder – 3-4tsp (or you can adjust according to your taste)
  • Salt

Tadka Ingredients:Set2:

  • Onion – 1/2 – roughly chopped
  • Chana dal – 1tsp
  • Mustard seeds – 2tsp
  • Jeera – 2tsp
  • Hing – 5-6 splashes
  • Curry leaves – 10 to 15
  • Oil – 2tsps

 

Procedure:

  1. Take medium size pan put all set1 ingredients, mix well and cook on medium flame for 5mins or until cranberries become mushy, add dhania powder mix well.
  2. Transfer step1 into blender (once it reaches normal temperature) and pulse it for 2 or 3 times.
  3. Turn on the stove and put  medium size pan, add oil and on by one ingredients from set 2 & saute for 2mins.
  4. Next transfer step2 into step3, mix well, check the taste & adjust if anything is needed.See how simple is that!!
  5. It goes well with hot hot white rice :).Anyone trying to avoid rice, can use this as spread on bread/rotis.
